Lazy Day Banana Muffin Recipe

There’s something  you should know about me.

I’m not a baker.

No. Really. I’m not. I have minor difficulties following recipes which can be disastrous when said recipe calls for baking powder and you add baking soda instead.

Who knew there was such a big difference?

But I also have a slight addiction to baked goods. As is evident by my waist. So I cheat.

Because there are days – long, rainy, cold days - when one just needs something warm and sweet and easy. It was on just such a day that I came up with Lazy Day Banana Muffins. Not only are they easy, moist, delicious, and low fat, but they only require two ingredients.

Lazy Day Banana Muffins

You will need:

1 box cake mix (I used French vanilla or spice, but I bet chocolate would be amazing.)

4 over ripe bananas

Step 1. Turn your oven to 400. Line a muffin tin with cupcake liners. If you don’t have liners, just give the tin a good spray with Pam. If you don’t have Pam, swipe with butter. If you don’t have butter, I don’t know if we should be talking any longer.

Step 2. Mash the bananas until creamy.

Step 3. Add dry cake mix and stir until all the mix is absorbed by the bananas. This will work. Trust me. I wouldn’t steer you wrong. Promise.

Step 4. Spoon into muffin tin and bake for 20 minutes.

Step 5. Eat. Enjoy. Eat some more. Especially since these suckers have less than 2 grams of fat per serving. Swear to God.

    If you use frozen bananas that have been thawed, it will be easier to combine them into the dry cake mix.

    Also, if you can find Duncan Hinze Caramel cake mix… throw in some choco chips and you have a very simple Banana’s Foster cake!
