EZPZ: Pig Candy Chunks

Holiday mornings with kids can be HECTIC. Duh. A few years ago I lost my mind and agreed to give my parents a break and have the entire family over for the holidays. I haven’t quite recovered. It went off fabulously, but the hit of the morning were the Pig Candy Chunks I made for the kids ( that were mainly devoured by the adults. Poor chirrun.) They are perfect for New Year’s, Superbowl Sunday, whatever your pleasure.

And, like all things here at Aiming Low, they are ridiculously simple. And gooooooood.

Start with bacon. And really, anything that starts with bacon must be awesome, right? I prefer to cook my bacon in the microwave, but if you are really pressed for time you can buy the overpriced pre-cooked bacon and zap it for a minute or two ’til it gets crispy. Be warned that it won’t work as well though, because you really need the bacon grease that you get from skillet or microwave pan bacon to get the “stuff” to stick right. Plus, you get to use the bacon grease for your fabulous black-eyed peas you’ll make for New Year’s day, right? Or not, if you’re one of those health nut types (what are you doing here?) I always use LOTS of bacon, like two or three packs worth. You want to have enough to cover a cookie sheet full of bread.

Anyway, whilst your bacon cooks, gather these other items : brown sugar, finely chopped pecans, syrup, and whop biscuits. What are whop biscuits? Biscuits you whop on the side of the counter to make the can open. Or if your name is Rachel Ray or Martha or Ree (WHO I LOVE) you may MAKE YOUR OWN. Overachiever. You may also use regular sliced bread if you are devoid of biscuits. If you happen to have it on hand, cinnamon raisin bread makes this extra awesome. You will also need a PAPER bag. Not plastic, PAPER. This is very important or your Pig Candy will turn out to be a sloppy nasty mess.

Cook your biscuits or lightly toast your bread ( smaller biscuits that aren’t so thick work better). Then cover a cookie sheet with foil and place sliced biscuit halves or toast side by side, filling the pan. Lightly mist them with spray butter. Take a cup or so of brown sugar and a half cup or so of pecans and put them in the paper bag. (if you don’t want to use pecans, don’t, it’s almost as good without them). Then crumble your bacon while still hot and covered in a light coating of its grease in the bag and shake well. Open the bag and inhale and see if the bacon is coating ok. If it needs more “stuff”, add it now. Then shake some more. Pour the covered bacon all over the bread, and immediately squeeze syrup over the bread/bacon combo. Pop it in a preheated oven at 400 degrees for about 10 minutes and then prepare to be loved on and worshipped. Then get ready to go to the store for more bacon.

    Question-do you think walnuts would work in the place of pecans? I often sub one for the other, so I am curious to know what the pig candy master thinks.
