Lemon Butter Pasta Sauce

rachelheadshotPasta is daunting.  Even pasta sauce that comes from a jar or can tends to make people cringe or shy away.

That shouldn’t be.  Pasta sauce is simple.  It’s flavors, really, that’s it.  Target your favorite flavors and play with them.  Whether it’s garlic and tomatoes or basil and peppers or lemon and butter.  It’s simple, easy and best of all, inexpensive.

One of the simplest most straight-forward DIY pasta sauces that is perfect for summer is Lemon Butter Sauce.

You may scoff and think you can’t do this… I’m going to show you how in less than 15 minutes.

Find 2 cloves of garlic (more if you’re a garlic lovah like I am)  remove the skins and thinly slice

5 Tbsp butter (yes, butter.. do NOT shame yourself by using margarine)

1 lemon.  zest 1/2 the lemon and then juice it.  (I don’t have a *real* lemon zester, I use the tiny 1/2 of my cheese grater.)

Put a skillet over medium heat.  Drop in the butter, zest, lemon juice and garlic.

Melt, blend and stir all the ingredients together.

Toss with pasta and serve with chicken, veggies or just top with poppy seeds.

You can make fabulous pasta that will satisfy everyone.  Have faith in yourself.  Cooking is about experimentation and fun.

    My mom makes a crazy olive oil / raw garlic / fresh tomato sauce that reminds me of this. You top it with browned breadcrumbs and grated cheese. Best. Ever.

    I thought this website was called AIMING LOW? That would mean buying Ragu and calling it a night. And what the hell is zest? How do you zest a lemon? Cant I buy zest in a jar? See that, that’s aiming low.

    I threw some small chunks of grilled bacon in there and served it with egg noodles and some large grilled scallops. I’ll bet it would be good with balogne and velveeta roll ups too.
